Combine in one bowl in this rough order:
- 3 large overripe bananas, mashed into pulp
- 3 large eggs
- 1 tsp pure vanilla extract
- 1 tsp pumpkin pie spice (or cinnamon or whatever you like really)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 cups almond flour
Optionally, also add:
- 1/4 cup dark chocolate chips, berries, or nuts
- 1 tsp grated peel of your choice of citrus fruit
Spoon into muffin cups or a greased muffin tin. You could probably do this as a loaf if you cooked it longer, too. Cook muffins at 350°F for 20-30 minutes (this will depend on your oven, for mine it was 30 minutes and I probably should have pulled them at 27).
