I wanted something Christmassy that wasn’t too terrible for me that involved cranberries, since we had some to use up, and found this recipe online. I added about a cup of fresh strawberries because they were at the “these are probably just fine but jesus murphy they won’t be tomorrow” stage, and I added vanilla because who TF makes crumble with no vanilla in it, and I changed the flour to quick oats. The source recipe says prep time is 10 minutes but that’s a lie, cutting 3 cups of fresh cranberries in half takes like 15 minutes all by itself, at least for an amateur like me.
Ingredients:
- 1/2 cup butter + however much you use to grease your pan
- 1 cup brown sugar (not packed)
- 1/2 cup quick oats
- 1 cup old-fashioned oats
- 1/2 tsp salt
- 3 cups fresh cranberries, halved
- 1 cup strawberries, chopped
- 1 tsp vanilla
Preheat oven to 175 C/350 F. Butter your pan. Mix butter, sugar, oats and salt. Put half in the pan, spreading evenly but don’t be too precious about it, this mixture is clumpy. Stir together cranberries, strawberries, and vanilla, and spread over mixture in pan. Put remaining mixture over berries. Bake 35-40 minutes, or 45 if the NES is doing ten-minute rolling blackouts because the state government is too cheap to run the electrical grid properly. Let sit 30 minutes before eating.
